Original Old Spot Sausage (The Governor) with Apples and Cider
A warming supper for a cold day. Serve with creamy mashed
potatoes. Serves 2.
6 large Happy Meats Governor sausages
75g butter
450 juicy dessert apples
6 juniper berries, lightly squashed
100ml dry cider or apple juice
100ml double cream
- Over a low heat, fry the sausages in half the butter
- Quarter and core the apples then slice them into segments.
- Fry the apples in the remaining butter until they have
softened a little and the edges are turning golden. Lift
the apples on to a warm serving dish.
- Add the cider to the pan with the juniper berries. Turn
the heat up slightly and let the cider bubble down until
nearly half has disappeared. Pour in the cream, season with
salt and pepper and leave to simmer for a few minutes.
- Place
the sausages on the apples and pour the sauce over both.
