Chestnut Stuffing
Makes 1Kg (21/4lb)
159g (4oz) butter
2 shallots, finely chopped
900g (2lb) of chestnuts, peeled
salt and freshly ground black
pepper

Melt the butter in a pan and gently fry the shallots for 2-3 minutes, then add
the chestnuts and cook until they begin to crumble, about 5 mins.
- Season with salt and pepper, then mask slightly with a
fork. Leave to cook, then get stuffing!
