Perfect Pork Crackling
Our Gloucestershire Old Spot pork makes excellent crackling.
Your joint will already be well scored by us.
- Dry the skin and rub in salt liberally. The salt will draw
out any water from the skin to leave a very crisp finish.
- Some people brush the skin lightly with oil but we find
this unnecessary.
- While cooking, ensure the crackling does not come into contact
with the meat juices or fat.
